Fish consumption is growing worldwide, not only in areas where fish products are the basis of the daily diet, but also in countries with no tradition of eating aquatic animals. There are several reasons for this increase. Some species of fish are a cheap protein source available even for consumers with very limited incomes. On the other hand, fish is a palatable, varied and healthy food that, unlike fatty meat products, is not high in saturated fat but a good source of omega-3 fatty acids.
With the current limitation of the natural stocks, aquaculture – fish farming- became the only alternative to meet the growing demand of fish. Although the inventory of species produced in captivity is wide, the main efforts are focusing on fish that could compete with its terrestrial counterparts, i.e. poultry.
Any fish suitable for aquaculture on a large scale must fulfill the conditions of fast growth, easy reproduction or availability of fingerlings, low protein requirements and wide tolerance to the environmental changes. Another added value is that the fish could be fed with feedstuffs (feed) not directly consumed by the humans.
Water availability is, of course, essential, but the new techniques of recirculation allow the installation of fish farms even in areas of very limited water resources, as the Middle East countries. Fish farms are not water consumers, but users and therefore can be combined with agricultural activities providing fertilizers to the plants through irrigation.
